I do it a little different than yours, I score the breast but cook it whole after marinating, and I cut the peppers and onions into only a few large pieces that I put in the pan to blacken the skins a bit before chopping coarsely to put in a taco. But by leaving the pieces larger, I can make other things with the leftovers besides tacos. jamabalaya, or mex stir frys, etc.

Fajita isn't really a specific cut of meat. It was the skirts of other cuts of beef that were usually thrown away. It's basically skirt steak. Traditionally it too was kinda like a box of chocolates.

I'd imagine this would be pretty good with mahi mahi (it's firm enough to not fall apart when cooked. Also what tattoo is that on your shoulder? It looks interesting.
