The argument for using a different spice should be: Why is pepper OK but not something else? Answer: Because we've always done it that way. which is a dumb reason. Ironically, pepper was originally used to cover the flavor of meat that had gone rancid. Salt, I understand. it's a fundamental ingredient that's necessary for our bodies to function. But why is it that the only other spice that you see on a table is pepper? There are a ton of fantastic spices that are can and should accompany food. Spices can improve beef or steak just as well as it can improve pork or poultry. We just need to get over our biases.

It's so funny seeing Brent struggle through watching the steaks get seasoned. As if the frivolous, hipster preoccupation with letting every steak be a journey somehow transcends cultural definition. Bros, not only are American hipster attitudes toward meat a _culture_, it's a boring culture when you compare it with other countries. Brent doesn't come off like a purist here, he comes off like a prude.

Hospitality? What? Great to hear a restaurateur talk about that and share his appreciation for the way he was treated abroad. Hospitality is a lost art here in the PNW. I was in North Carolina last year and it was alive and well. Noticeably different and valued. Made the eating experience so much better. When I'm in DC I'm eating there. Thanks for the video.

the hosts of prime time came off pretty arrogant and close minded here. you could see them dreading him seasoning the steaks the way he was. made the humble restaurant owners nervous as. cudos to them for trying it though. everyone hates whats different until its trending.

LOL i laughed cause literally these dudes always use salt and pepper and never introduce they steaks to new flavors, they critic the whole process of the chefs style then eat the steak and have they taste buds blow away LOOOL

What a mess this video is. Of all the Middle Eastern restaurants in the DC area you picked one with a self-described non-expert chef who dry rub steaks in a way your guys obviously find wrong. Do better.

This has got to be my favourite episode ever. This restaurant is the one and only place I've ever seen in any cooking show ever that I've decided on planning a trip for. And I'm not even in the US.

My dialy reminder not to show how I do stuff to whites. They'll start a business when they get back home and pay homage to my culture after being around and learning a couple things.

I too like an accompaniment of steak with my spice rub. I mean I'll use a little rub, sprinkled like salt, you can still tell it's a steak you're cooking. Looked way overkill.
