There are lots of ways to reduce the amount of carbs in a recipe, but when it comes to stuffed pasta dishes, our options are limited. So, one of my favorite tricks is to replace the pasta with thinly sliced meat, to produce something low carb, and high protein. Bryan: Absolutely wonderful as usual. Ham and scallop potataoes ring my bell, so I will try a version that way and with the vegies in the ham with the ricotta. This is a great building block, ive already have 10 vqriations runnung through my mind. Thankyiu Chef John!

uncured is another one of those BS words that the food companies get away with to make things seem healthier than they are. Processed meats usually contain nitrates and nitrites, which are known carcinogens.
Companies that make uncured meats generally use celery powder, a naturally occurring source of. Nitrates!
It's literally exactly the same chemical compound, but because it's natural, they can call it uncured.
Eating too much of these foods can lead to colon cancer, whether the nitrates came from a lab or from celery.

I'm glad you scrape all your bowls and pans out, I hate to watch cooks/chefs that waste food. It goes against my character having been raised by people that lived during the depression. Waste not, want not. I remember watching a video of Chef Jacques Pepin, when he broke an egg he scraped every ounce of liquid out of the shell - he said, as he had been taught at the cooking school.

Uncured cured meats are usually cured with celery, which has all the nitrates needed to cure meat. I get into a fight with the missus on this subject maybe every eighteen months because she thinks 'uncured' means 'nitrate free. '

Carbs aren't my problem,
processed meats are: NO HAM, SAUSAGE, SALAMI BOLOGNA & EXTRA.
Meats of choices: chicken breast, turkey breast, fish & lean pork occasionally.
Sodium less than 2000 mg daily.

Would love to see more meat-less options or maybe creating a variety of plant-based cheeses. I tried to make some and felt like a scientist doing it. Maybe a plant based charcuterie board for those long evenings at home

This reminds me of a casserole I make stuffing wrapped inside a slice of turkey deli meat placed on top of mashed potatoes and gravy
