Just because a bread recipe is no knead doesn t mean it s no work. If you re looking for fast and easy, this is not the recipe for you, but if you want to enjoy the bubbliest, most delicious, highest-hydration focaccia you ve ever had, then get ready for a wet and wild ride. George: Nobody EVER puts enough oil on. Culinary school instructor, baking Foccacia - If it feels like you've put too much oil on it, good. Now add some more. That's why John's Foccacia was ciabatta-like. It shouldn't have been - but he skipped the proper olive oil bath prior to hitting the oven.
(After poking holes and adding herbs, etc, prior to the oven, add enough oil that you can see it pooling in the holes and starting to come up the sides of the dough. You'll end up with the butteriest foccacia known to man)

You re a dirty liar! The highest hydration dough you made was 6 years ago with the pourable pizza. To be fair, you did say it was a batter, but you also referred to it as a dough. So you know keep making amazing stuff!

I miss your no knead bread. I love that bread but the link doesn't exist any longer I remembered most of it but not all. Hope you can give out the recipe again. It is very rustic and feels great when shaping. Thank you

I bet doing the final bake in a cast iron would be really good as well. Similar to Serious Eats' Foolproof Pan Pizza. Maybe half the dough at the end for two separate Focaccias

I like big bubbles and I cannot lie
You other bakers can't deny
When a Guido walks in with an itty bitty crumb
And a flat bread in your face
You get sprung

I finally bought a scale. Sigh. It's small and won't take up much room. I was scale-resistant for years. Correction, decades. I finally caved and a scale is on the way!

This looks amazing and I enjoyed watching YOU make it but I don't think I have that kind of commitment to one loaf of bread that my young ones would devour in 5 minutes.

One of the best focacias I ever made was a otherwise failed batch that was almost like a batter. I poured it into a rimmed baking sheet. It was excellent.

Do you have a recipe for a bread like you get when you go to subway sandwich shops? I have heard it has sugar that makes it more a cake instead of bread
reply

the bubbles are brown like they are supposed to be, but the rest of the surface of that focaccia is so raw I can still hear it telling Spongebob to f off.
