Chef John, my mom has been making this pie since the early '60's when she learned how to do it from her neighbor, the elderly Mrs. Billard, in Richmond, Virginia. However, she doesn't use corn meal. I can't imagine what kind of texture that would impart. Is it gritty Or does it soften like polenta Also, lemon juice is probably better than vinegar because it blends with the peach flavor better. Finally, Mrs. Billard used nutmeg also in the batter.

Chess pie is a personal favorite of mine. Easy to make, needs no mixer, and all the ingredients are usually on hand. The peaches are a nice variation, but don't neglect to try the pie without them. If you've never had chess pie, with or without lemon juice added, you've missed a treat.

I truly love the Summer fruits. Peaches, Nectarines, watermelon, mangoes, strawberries, blueberries, and cantaloupe are just too good to miss. I'd love to see Chef John pickle each of these wonderful kisses of sunshine. Especially Mangoes. They don't get enough appreciation.

If I were to use a frozen, ready made pie crust, should I still use the weights and pre-bake the crust The peaches ended up at top of the pie. If were to. cut the pieces smaller, would they settle throughout the pie or still rise up to the top

When Chef John said the enthusiastic whisking burned off exactly the same number of calories as one slice of pie I thought imagine having the iron will to stop at one slice. And then Chef John made up an excuse to have two.

As I watch this, yesterday I picked my peach tree clean. I'm in SC. I have my kitchen table covered with peaches getting slightly riper. Will be canning, dehydrating. And probably trying this recipe!

Interesting take on chess pie. We still make my grandmother’s recipe, especially around the holidays. We often serve it with a scoop of vanilla ice cream. I think that would work just fine here.

I love peaches! Just bought some. But I love custard, too so I can't wait to make this chess pie which I thought would be too fancy and hard to make, but as always, Chef John makes it easy!

I'm so glad he picked it up and just took a bite out of the whole piece like a piece of pizza cuz the whole time he was cutting it with the fork I was just thinking pick it up and eat it

If you don't have pie weights pennies work great. They conduct the heat to the crust and help with the browning. And speaking of evenly spaced that would describe me in the 70's.

I confess I've never had an issue with too many peaches in a peach pie. It is my favorite summer pie. I don't disagree with Chef John often, but this is one of those times.

I love these desert recipes.
I wonder if adding the tiniest bit of apricot, peach, or orange extract. or rosewater. Just a tiny amount. And/or maybe some nutmeg

Last week I went to the grocery store looking for peach cobbler, but all they had was peach pie. When I cut into it, it was an apple pie. I was so distressed.

the problem i have with peaches is that i cant stop taste testing them all the way till baking, and i end up baking a diy deep dish hard crust pizza instead

I made peach cobbler for dessert because I was too lazy to make and blind bake a pie crust. It's about one hundred degrees in my kitchen already.
