I made this last night and I have to say, it was amazing Everyone loves it and they want me to make it again some day. I added it to my personal recipes, I definitely plan on making it again I even tweeked it a bit by adding some lemongrass instead of the jalapenos (since the fam don't like them much lol) to the stuffing, it was delicious.

So, Chef John: When did chicken tenderloins stop being considered part of the breast? Follow up question: When did they become boneless wings? Or: When did mechanically separated tenderloin and breast meat become packed white meat breaded wings? I'm certain there is a sequence of years. starting with skinless versions, for display.

I used this method last night for stuffing my chicken. Much better than trying to roll up the breast, but I made my hole way too small for my filling. I used a half teaspoon measuring spoon to jam my filling into the breast. It was a little messy. I topped with bread crumbs. Used a few too many of those. they were seasoned.

My son and I were feeling homesick for SF so we decided to catch up on some Food Wishes. We were curious as to what butcher shop is your favorite? We loved to go to Avedano's to see what they had. Just had to comment: made this over the weekend with a filling of spring onion, garlic, baby spinach, feta, and a pesto-herbed goat gouda. It was absolutely incredible. The feta is what really brought it to life, though, so I'm not sure I agree with the literally any other cheese comment.

To make a title Spring Chicken, it would assume that the chicken was in some way a spring chicken. It would indicate that a spring chicken was some how better that other seasonal chickens. What is a spring chicken? Is it better or worse than a summer or winter chicken?

Substitute (or leave out) out the breadcrumbs and you have a keto-friendly meal. I am going to try goat cheese, but maybe par cook the bacon just a bit before wrapping. The bacon just looked a bit flabby on the chicken breast.
