I had to run downstairs and make this. In addition to the spices he gives, my kid and I also threw in some freshly shredded parmigiano reggiano and a little dash of smoked paprika, dried onion and garlic. I had no elbow mac, so we rounded up small quantities of different leftover pasta. We used a combination of shells and spirals. Just make sure your shapes are cooked through. IMPORTANT: DO NOT LET YOUR MILK COME TO A FULL BOIL. SIMMER ONLY Boiling will curdle the milk and you won't have the shiny, silky cheese sauce you were envisioning. (If it boils OVER, you'll have a big mess on your pot and stove top, and you'll have wasted ingredients)Sooo, that happened. I was angry at myself because I KNOW this, but I wasn't paying attention and was joking around with my daughter. I snatched it off of the heat right away, so it wasn't too bad. We gobbled it up for lunch. Delicious And we learned Important Things. If you make a mistake, okay, it happened. Salvage what you can, toss what you can't, forgive yourself, learn, and move on. Next time, you'll do it better. That's cooking. That's life (Unless it's a wedding cake. People can be unreasonable about those)

Great recipe I have my own variation on this. Start by frying some chopped bacon in a wide, tall skillet with some olive oil, and once half cooked add your breadcrumbs. Give them a light toast, then store in a bowl. Now, put some butter in the pan and fry some finely chopped shallot for some onion flavour and fry up till soft. Turn the heat to low and add in your pasta for a gentle toast. Then, pour in your milk and some cayenne pepper and nutmeg. Once your pasta is cooked Al dente, take the pan off the heat and add your cheeses, I like a mix of Mozzarella, Parmesan and Red Leicester. Stir those in until melted and top with more Mozzarella and your breadcrumb and bacon mixture. Bake that until the top is lovely and brown and serve and enjoy.

Made this today, and it was very good. A couple notes though: 1) Be wary of the saltiness of the cheese you choose. I used a smoked bacon cheddar that made the end product come out a bit more salty than I like. If your cheese is real salty, maybe add a little less to the milk mixture. 2) I needed more milk than indicated for the macaroni I used. Not sure if it was just the brand or what, but the 1cup noodles nearly soaked up all the milk before they were done. I ended up adding a splash while they were cooking, and the final product still came out pretty thick. Next time, I'll probably start with an extra half cup. Other than that, delicious.

I've tried this in an inexpensive pot-style rice cooker that 99% of the time just sits in my cupboard. Anyways, I simmered mixture as stated for 8 min. UNCOVERED on COOK setting, stirring occasionally (DONT USE LID HERE, it WILL BOIL OVER. Then I switched it to WARM and stirred in the cheeses. I THEN covered it, leaving it on WARM setting for the 3 remaining mins. while I prepared the bread crumbs. It actually came out very good Funny thing, I NEVER use a rice cooker to make rice, but I may use it now for quick Mac and cheese Thanks for recipe chef john

Mine came out with a grainy, almost applesauce like texture when I was scraping the bottom of the pot to get it all out, and even just looking at it, when immediately stirred it almost looked like applesauce instead of a cheese sauce. I turned off the heat completely before adding the cheese so that isnt it. Maybe the film that happens on top of the milk when its simmering and at a high heat and hot mixed with the macaroni is what caused this? Thanks for the help anyone.

chef john got my back many, many times with his techniques videos, but i gotta say this one was my baked cauliflower fries. just goes to say that even if you consider yourself a confident home cook, sometimes these, apparently, quick and easy recipes end up being an excruciating learning experience. now i know i will never make this one again and that my girl would literally eat a grease rag. appreciate it.

I actually made this and it was so freaking delicious I skipped nutmeg and added powered mustard. Everything I've made using Chef John's recipes have been great. I've made flour tortillas, cran orange meatballs, spicy chickpeas and a few others. All sooo good. I've been reading the blog and watching these videos for about 9 or 10 years now and I've become a better cook along the way. Thanks Chef John

I tried this today and it was a disaster The cheese and milk split pretty quickly after the cheese had melted so I was left with a bunch of cheese curds and liquid which I had to strain. Was it on too high a heat (it was on medium, I accidently forgot to put it on low heat) or just that it was cooked for too long? Or could it be due to poor quality cheese?

You are the Tina Louise of your mac'n'cheeseThis way is fast, but I really like adding some textural variety and extra flavor by adding sauteed onions. Also, since the sauce dilutes the cheese flavor and sharpness so much, I like an equal mixture of very sharp cheddar and pepper jack for flavor and kick, and monterey jack for creaminess.
