Here in Brasil we eat a lot polenta. Its very popular in Rio de Janeiro know as Ragu (witch is a very liquid polenta. Here in So Paulo we used To do The same way Gordon do, but we made with Fub (almost a corner flower) and put some tomato sauce. In bars we can find fried polenta, what is delicious with some beer: )

Fast cooking polenta its the devil You should use good whole corn flour and cook it for 40-50 minutes, depending on how thick you want it. and for the oil, pepper and parmigiano during the cooking, if you use fast cooking flour you need more flavor, but with the right ingredients you wont need such escamotage.

I am wondering if i maybe did something wrong with my Polenta. I did follow instructions to the T but other arf said it was too salty and did not like the Texture. This past few weeks i have been on a Gordon Ramsay Marathon cooking up many of your dishes lol.

in Trinidad W. I. we start with 2-3 okra, pimentos and chives [optional carrots] cooked in the seasoned water to which we add the corn meal-flour. no cheese or milk but it sets just as well and is served with fish curried in coconut milk or red beans. delicious

also wtf is up with puttin the cheese right on top of the tomato stems? are you not gonna have to tear appart the dish to take the stems out before eating it?
