Broccoli Quesadillas made with homemade tortillas takes only few minutes to prepare and the final dish is healthy and delicious, perfect for lunch or dinner. You can use any leftover cooked broccoli or you can just cook the broccoli especially for this recipe. Ingredients: Makes 4 servings 1 cup broccoli, cooked and chopped, room temperature 1 cup mozzarella, shredded 1/4 cup corn kernels 1/4 tsp garlic powder 4 flour tortillas (10 inches, room temperature Salt and freshly ground black pepper, to taste 2 tbsp olive oil Directions 1. If you want to use homemade tortillas this would be the first step. For homemade tortillas you can find the recipe here. After you make them let them cool down, to reach the room temperature. 2. To cook broccoli bring a large pot of water to a boil. Add one teaspoon of salt. Add the broccoli florets and cook until crisp-tender for about 2 minutes. Remove and place in a bowl with ice water. Drain and chop the broccoli. 3. Combine broccoli with cheese, corn and garlic powder. Add salt and pepper. Divide mixture in four, for each tortilla. Add the mixture on one half of the tortillas, and fold it with the other half. 4. To cook broccoli bring a large pot of water to a boil. Add one teaspoon of salt. My husband said, What piece of heaven did this fall from? I sauteed the broccoli in olive oil, salt, pepper, and garlic ahead of time. I added red pepper flakes to the quesadilla to spice it up a bit. Used whole wheat tortillas and avocado oil in the pan to get the tortillas golden brown. Super easy and delicious recipe. Thanks so much

Thank you for the recipe. Before seeing your video I thought of making chicken quesadilla but now I changed to this recipe because my 2 year old loves broccoli and corn. I love all your videos.

I have made a vegan version of these easy, delicious quesadillas and it is as wonderful. The first time, I did not drain broccoli and corn enough, so it came out soggy.

please don't fry quesadillas you can only put in the skillet, we do it in Mexico, extra oil is don't need. The recipe sounds great, I will cook it
