#FANLOVEFEB I don't have a fave cake. I really like them all. But I chose this one because it taught me that a cake doesn't necessarily needs to be complicated to look stunning. This was the first cake I attempt to recreate, in a chocolate vanilla, chess style for my brother. And it taught me the drops technique i've been using a lot lately. I'm so making a cake like this for my birthday next week, with lots of strawberries

OK, wait. I'm confused. You also use a ratio of 1: 1 with white chocolate ganache? How does that work? Every time I've tried that it's been basically just white chocolate flavored cream. It never sets, it just stays all runny (even after a night in the fridge, so I always have to use 3 parts white chocolate to 1 part cream. Is that maybe to do with the cream (only 30% in Germany) or the chocolate?
