How To Make moist, delicious COCONUT CAKE! Easy bake and simple steps! Ruthi: Hi Yolanda! I I noticed your using salted butter instead of unsalted. I've never baked with salted butter. I've just heard its hard to control the amount of salt. But I'm going to give you coconut cake recipe a try. It looks great and fluffy! Is there a reason why you prefer salted butter in this cake?

Hi Yo, When following your recipe I noticed that my batter is a lot more watery looking then yours appears in the video. Any idea why I am not achieving the thickness in my batter? It tends to get runny after I begin to add my eggs. Im open to suggestions from all. =)

Every time I try to beat butter and sugar together, in any recipe, the butter seems to melt, there are still sugar crystals left, and it just becomes a huge, liquidy mess. Anyone know how to prevent this? Also, what is a good brand of butter to use for baking?

I'm so tempted to make your cakes but they're scaled big---there's only two people here who would eat it! Please show us a mini version of it. or should I just half the recipe and make smaller amount. :(

I'm having a hard time finding desiccated coconut. I found desiccated coconut flour but it doesn't say sweetened. I also found desiccated chips and shredded coconut. Can I just blend those?

Anyone who tries this the cake the batter comes out very liquidy. Also it does smell like coconut but doesnt really taste like coconut and the texture of the cake was sticky and greasy.
