Okay, 3 parts water, 1 part rice, cook 12 mins. Add cheese at the end. Did I actually just watch a video where Gennaro just cooked short grain rice and added cheese? At the end he talks about adding extra things, but the base recipe is the same as making long grain rice.

So easy, think this is going to be the base for some arancini which I have eaten many many times but not tried to make at home. Lovely comments about the great Antonio who I was lucky enough to meet in his restaurant in London. Thanks Gennaro your love of food is inspirational

What can i do with my leftover roast pumpkin pieces. Was gonna do a soup but i want to use pumpkin and parmesan. Im gonna adjust this recipe. That place looks like hogwarts for some reason. Hes super epic

Never would have thought of making a risotto this way! It looks delicious. A touching tribute to Antonio as well, he was a wonderful and inspirational man. MOFMOF will stay with me in the kitchen forever!

Small warning: When he says 250 g each about the tins of water, he assumes rice and water have the same density. A tin designed to fit 250 g of rice probably fits way more than 250 g water.
