Here in Dublin you could visit Gourmet Stores line Karen Listons on Camden st, Fallon and Byrne on Wicklow St or Roy Fox in Donnybrook and they don't cost a fortune. Nothing like headin into one of these stores on Sat afternoon and pick up some really gorgeous ingredients for a nice supper!

So I've made pancetta (or tried to cure my own) and I noticed it's extremely salty and doesn't really taste special (just tastes like salty pork belly. What's the problem? (also I didn't use sodium nitrite in curing it)

This is so exothic to watch a beautiful country, it is warm outside but it poors that beautiful rain and watch marvelous food being made! I wish I could have a taste of that right now! :O
