Looks delicious! Love the mango with the prawn. We put sweet tropical fruit with white fish all the time and can only imagine how the shellfish and pork just amp it up. We're definitely trying this one!

it's referring to the fact that one chilli boiling would be all by itself. so 3 chilli's means that they are there together. they can have a chat. and be sociable if you catch my drift.

You could do the same with thin chicken strips or beef strips or even pork strips. But. it's not classed as surf n turf. (Chicken would work well)

It's the skin and fat off of the pork. Usually coated in olive oil and salt and cooked at a very high heat. It becomes very crispy and crunchy!

Question? If you want to make a healthier version of this could you maybe sprinkle some oil and bake instead of deep frying? Could that work?
