I include a recipe for this well-known dish because most people I know get it completely wrong, either adding milk or cream or letting the eggs become scrambled. This recipe is the real thing. It was brought to Lazio from Umbria by coal men (carbonari, who came to sell charcoal to the Romans. Since then it has been adopted by the Romans and is famous worldwide. Serves Serves 2 (good portions) 220g Spaghetti or Spaghettoni (the largest spaghetti) 25g Guanciale (the cheek of the pork) or pancetta (Italian bacon) cut into small cubes. 2 tbsp olive oil 2 eggs 50g aged pecorino freshly grated. Freshly ground black pepper. Parmesan cheese is insult to ROMAN People.

Ever wondered how to make the traditional carbonara sauce without all that nasty cream and fake sauce? Italians never use cream, milk or any such thing in their carbonara! . In Rome we use two types of pasta with carbonara; rigatoni or spaghetti. They are both delicious swith this sauce. Ingredients to use for 2 people: - 90/100 gr of Guanciale or Pancetta - 3 Eggs - 80 gr Pecorino Romano (cheese) - 1/2 tsp Black Pepper - 1/2 tsp Salt - 200 gr Spaghetti So simple! Isn't it?

The salsa looks incredibly delicious! Btw, I have a doubt. you shouldn't put pasta in cold water before it goes to the pan with the bacon and all? I do it because that way the pasta stop cooking and it grows and makes itself bigger, but I don't know if I'm wrong hahaha

Say what you will about the cream - I've tried a number of these Youtube carbonara recipes with varying degrees of authenticity - this is one of my favourites. It's actually just delicious and so comforting. Good job sisters!

Bah, screw my last comment. thas how they make it, and thas how they like it. All recipes are improvised. Bring the cream! Gonna try it next time and see if it tastes better. If so, I can let go of traditional.

To all the butthurt 'Italians': At 0: 14 it literally says our version of carbonara. Following that is the title 'Chiappa Carbonara'. Nowhere does it say the 'original Carbonara' or something. Calm down please

NON si mette l'aglio nella carbonara! .poi se tu vuoi ci metti pure la cipolla e tutto quello che vuoi tu. ma nella VERA carbonara ci va solo: guanciale, pecorino o parmigiano e uovo. Greetings from Italy

They're from Italy originally and just picked up the accent. its like a mexican moving from Mexico to New York or Chicago and still speaking the spanish with the correct pronunciation, not over emphasis

It's not a CLASSIC if you bastardise it. Just call it your creamy scrambled eggy bacon crisp spag. If you love it and you enjoyed making it, and ate all of it your winning. Nice accents by the way.

We use full cream (none of this reduced fat rubbish) Creme Fraise instead of cream in our cooking. It gives a piquant taste, a bit of a mild acidic taste adds to all the cream requiring recipes.
