I did actually make this over Christmas. It looked fantastic. Unlike other roasts I have made it held together in good meaty slices and did not embarassingly disintegrate at the dinner table. I had hoped for an explosion of flavours given all the wonderful ingredients. However there were so many flavours and textures that they did seem to cancel each other out and the resulting taste was a bit bland. That said it tasted better next day cold with mango chutney and salad. If I made it again I would dispense with the spicy sauce. that just masked any taste that was in the roast.

i would not want massive lumps of apricot in it, doesn't go with a tomato sauce. not a bad recipe though. i advise folk to brown onions separately and make a very sticky brown mush with them to add as a binding agent instead of eggs. olive oil instead of butter, much much tastier. and fresh chopped herbs over the top with a splash of a good home made vinaigrette instead of cheese to make it vegan. please use organic good quality cheese if you really want cheese. cheers!

I made this for xmas 2016 and I must say I was very skeptical about how it will taste. But it was amazingly delicious. I am going to make it again tomorrow only thing I will tweak is the sauce as it was a bit over powering and bitter. I had to add some brown sugar to make it bearable. I will use one tin instead and blend the sauce. Otherwise this meal is super delicious vegetarian meal.

The smell of that coming out of the oven must have been mouth watering! I think even hard core meat eaters would want to take a bite and the look of it resembles a proper meatloaf. No need for vegetarians to get something boring at your holiday gatherings with this baby. Jamie has you covered. Nice!

My wife did not make this correctly, it looked nowhere near the picture so i beat her but i did it out of passionate love, hopefully next time she will learn to follow Jamie instructions, his recipes seem to cause more domestic violence than they are worth. i stick to pasta noodles.

Although this is a vegetarian recipe, it uses the two most horrible ingredients for animals: eggs and cheese. Egg production is the most barbaric of all animal products, with milk not far behind to make that cheese. There is no ethical way a vegetarian can eat this.

the sauce looked nice but with all the flavours you've got going on in the loaf and with the seasoning I feel like you really don't need it. I'd just make the nut loaf and put it on a bed of seasoned potato mash or puree and chuck a nice salad together.

I'm thinking of trying this vegan, with a flax seed mixture as a egg replacement for starters. I assume you (Jamie) aren't entirely familiar with vegan cooking, but do you think that would work alone, or should I do some sort of applesauce combo as well?

Do you have any recipes that exploit the beautiful combo that is ginger and lemon? I've recently discovered a dark chocolate with ginger and lemon, and it's like a party of perfection in my mouth. I have yet to taste them together in a proper dinner though.

my (vegitarian) family had a similar nut roast last Christmas, but we used mainly chestnuts and my Mom and I made a cranberry sauce to go with it. It was deicious: ) even though my Grandma was a little bit weirded out: D
