A very good recipe. But remotely Chinese inspired. With lime, chilli and coriander, it's more Thai. Imagine, just by taking away the Szechuan pepper and five spice, less salt and and drizzle a bit of fish sauce. It's a Thai dish. And the way he rubs the steak with the sauce looks more contemporary Japanese. A more Chinese way could be. take away the lime juice and use soy sauce instead. No coriander but add a a touch of scallion in the sauce. Don't rub but serve it as a dipping sauce on side.

This desperately needed sweetness when I made it. I bought honey with everything else when I was shopping for this dish because I know this flavor profile doesn't work without sweetness and it's surprising he doesn't do anything to balance it out. If you do exactly this it's not right in my opinion but make it just the same way he does and drizzle a good bit of honey over and you won't be able to stop eating it. Love Jamie but this seems like an oversight.

I'm Chinese, and I completely appreciate this recipe, Jamie! It looks delicious! I think cooking's all about creating wonderful recipes to share and being inspired by different cultures all over the world. It doesn't matter where you're from, and no big deal if it's not entirely authentic, as long as you're enjoying good food, people can create whatever they like! That's what makes cooking so beautiful and amazing! Can't wait for more, Jamie! :D

Never heard of Sichuan pepper before. One question: hos can you just by looking at a steak tell if it good quality? I've bought steaks from my local butcher before that looks like the ones you have in the video but they weren't particularly tender.

I'm doing my steak like this next time! Heston said heat your pan for ten minutes and then pour the oil. I had oil spitting in my face when I put the Steak in! lol I'm sticking with the griddle action! Cast Iron griddle that bad boy up! lol

So ya people know; Sichuan pepper similar to anise or even black pepper corn. It definitely will numb your taste buds, so GO EASY on it. I think his Tblsp is a bit over the top--I'd recommend half that.
