Sai ua is a seriously tasty northern Thai sausage. Get more details about this place here: Sai ua ) is northern Thai sausage, and one of the serious gems of northern Lanna cuisine - its something I really look forward to eating when I take a trip to the north of Thailand. The sausage is famous especially in Chiang Mai and Chiang Rai. Sai ua ) is much more than just a sausage, its an herb infused, spicy sauce, thats absolutely packed with flavor and fragrance. In Chiang Mai, youll find tons of vendors selling sai ua, everyone with their slightly own unique recipe. The basic ingredients that go into the sausage are ground pork, lemongrass, galangal, kaffir lime leaves, chilies, and then a handful of other dry seasoning and spices. Ive had quite a few different version in Chiang Mai, some of them are more fatty and more porky, while others are more herb filled and spicy. It all sort of depends on your personal preference which version you like and for myself it sort of depends on the mood Im in. Most of the time I tend to prefer the herb filled version of sai ua. Where should I get sai ua ) in Chiang Mai? There are many places scattered throughout Chiang Mai that are extremely famous for making delicious sausage. Its available at street food stands, at markets, and often at northern Thai restaurants as well. In Thailand, if youre from Bangkok and you visit Chiang Mai, you cannot return home without bringing some northern Thai sausage with you; You family would not be happy. Warorot Market, located in the center of Chiang Mai is a famous place that many people go to buy their supply of sai ua. But theres another famous, maybe a little more local of a market, called Ton Payom Market ) that is also known for its many sai ua ) vendors. I think there were about ten different places to choose from, so after some contemplation we just had to choose a place. We chose Sai Ua La Wan. Youll know theres sai ua ) available when you notice a big coil of meat sitting on the table. They normally have it ready to go, you buy by the kilo, and then theyll wrap it up and prepare it for you to take away. There are other places where they heat it up for you to eat right there, but at this place it was more of a takeaway spot. The sausage at Sai Ua La Wan ) was sort of inbetween the really herb filled version and the meaty kind. It had good meatiness to it, but it was also nice and spice filled. I thought it was quite a good balance. I probably prefer the more heavily herb flavored versions, but I still thought the sai ua ) at Sai Ua La Wan ) was good. If youre ever in Chiang Mai, sai ua ) is something you need to try. Its one of the most flavorful sausages ever. Mark, is there anything that you don't enjoy eating? Just kidding, seeing that you have uploaded a video always makes my day. In appearance, the Sai Ua looks remarkably like the South African Boerewors (whose ancestor is the Dutch Verse Worst, although from your description, it's filling is very different. I'm wondering if - like many things that the Dutch East India company brought back to Europe, that there's a tentative 'genealogical' (if that word can be applied to sausage) link (excuse the pun) between the two. I can imagine that the lemon grass flavour would take the taste levels to new heights. Best regards, Sean

My girlfriend and I are currently in Chiang Mai, and we have discovered this incredible sausage We are hooked, nothing comes close. We came here looking for the right way to pronounce sai ua. This is a great video describing the sausage. Thanks. :-)

Hey Mark. Had you try the Chiangmai sausage in Siam Paragon? It's in front of Gourmet Supermarket. It's very good. We always go there for the sausage and sticky rice when we are in Bangkok.

I like how u show ur travels but man its sooo annoying when u taste foods how u close ur eyes all the time u dont have to moan after every bite unless it turns u on or sumthing lol

There is a plethora of Thai Restaurants here in Germany, but I can never find one with the exact taste as Thai food I have had during my trips to Thailand.
