Welcome to Mae Hong Son (, located in the very northwestern corner of Thailand. Today, we are visiting a Hill Tribe Village of the Lawa People (. While many people groups in Northern Thailand trace their ancestry to South China (Yunnan) and Myanmar, the Lawa People ( ) are an indigenous to Thailand. They are cooking a unique dish, which is called to-sabuak, basically a boiled meat salad full of local herbs. So let s learn about the amazing Lawa People of Thailand! Ban La Oop Village ( ) is located near Mae Sariang in Mae Hong Son Province of Thailand. The village itself is spectacularly beautiful, on the peaks of mountains where they grow beans, starches, and now coffee. When we arrived they were ready to get started for our main dish. To make it, they simply boiled pork in water until it was fully cooked. I think one of the main key steps though was the roasted chilies which were charred before being pounded. When the pork was ready, they sliced it all up, and mixed it with chilies, lemongrass, coriander, and salt. The result was basically a pork boiled salad, full of vibrant local herbs. It dawned on me, this could really be an original food of Thailand, an ancient method of cooking and simple technique of combining meat with herbs for seasoning. It was delicious, simple, and satisfying. It was also really cool to hang out with the Lawa People ( ) and especially to hang out with Aunty! OMG. Its the most Invaluable moments sharing their food & Dine with em together. which teach us a lot about Healthy food & eating em so Earthy. You know Mark I personally feel the lifestyle and the Natural Priciples of Ancient Ppl and Tribals are much much Healthier than our lifestyles from the urban world & its Habitat. As my childhood has grown with the Tribals of a Tribe called Jharkhand. I can feel and understand the beauty of their simplicity in their lives and their foods simultinously which is all so common with every Tribes Worldwide and which is a stimulant for my Soul & Heart which is so loving & Closer to the Mother Nature, Which is so uncompareable & Precious. Yes We Urbans can ease our life so Healthy, Mentally, Physically, Psychologically if we will ever learn to Adopt the Earthy & Tribal Way. because they are still much advanced & Much Healthy than our Advanced Urban World. I Love them from my Heart +++++++

They are very special people who used to live quite isolated in the forest.
We have met and seen the Malabri and in what conditions these people have to survive, not easy I can tell you: -(

Thank you Mark for taking us to these fascinating places and of course the food! These beautiful people remind me of the indigenous tribes in the Philippines as well, like the Igorots. So heartwarming to see how different but how similar we are, bound by food and kindness.

Colonialism has been a nightmare for indigenous languages and cultures. It is so nice to see there are other survivors of genocide. These people need to teach their children the language forever. It is so critical. They must know this already.

Was the gunk from cooking the pork cleared from that soup? Everything is 'amazing' for Mark, including the soup before the salt was added The same 'orgasmic' expression on his face no matter what he eats - everything is wonderful and amazing.

Mark, fascinating as always but I have my doubts about it being an original Thai dish as you said, since my understanding is that the Portuguese brought chilies to Thailand, I guess in the 16th century

Hi Mark what you guys call rozelle, we in Trinidad and Tobago in the West Indies call it sorrel and it is considered the fruit of the plant, it's made into a drink and also into a jam.
