Welcome to Chittagong in the south of Bangladesh, along the coast, is famous for its mezban - a traditional meal celebration where a full cow is cooked into 4 different dishes. Today we have the extremely special opportunity to see the dishes of a mezban being prepared and to watch the entire process. Mezzan Haile Ayun is a restaurant in Chittagong with locations in Dhaka and Sharjah that specializes in mezban. We had the privilege to go to their central kitchen to watch the entire process. Every mezban meal starts with an entire cow - the full cow. The meat must be fresh and they parted it out within 45 minutes, all the way from cow to cubes. The most important dish is the mezbani beef, a curry, but like a slow cooked stew filled with beef, a huge amount of spices, green chilies, mustard oil, and one of the signature tastes from a spice called radhuni. Every dish cooks over fire, slow cooked until fully mingled and flavors melting together. Additionally there s black beef cooked in spices and dry fried until all the spices were caked onto each cube meat. Another dish is the daal, which is cooked with all the organs of the cow. And finally the bones which are cooked for the flavor, bone marrow, in a soup. The entire meal, all four dishes are a traditional Bangladeshi mezban. The meal was outstanding, so much flavor so fresh, and so complex. All the dishes each went together in perfect harmony. It s one of the best food experiences in Bangladesh and it was truly memorable. Thank you so much to Petuk Couple for arranging this and for showing me around Bangladesh! Phil: This series on Bangladesh is some of your best work. I live in Melbourne Australia which has a large Bangladeshi population. Unfortunately, I'm not aware of any restaurants. It seems the local guys are maybe integrated into the Indian and Sri Lankan food culture. If anyone knows of Bangladeshi food in Melbourne, I'm there. Otherwise, I need to go to Sri Lanka. One of my new food targets.

Dear Mark, my family has been following you for years. We are thrilled that you finally made it to Bangladesh. We have been in the USA for three decades now but were born in Bangladesh. I found your videos during the pandemic and my wife has been following you for years before that. I have heard about the Mezban but never experienced it myself, so thank you for making this video and bringing my beloved Bangladesh to the world in a positive light. If you are ever back in New York, a home-cooked Bengali feast awaits in Queens, New York!

The inevitable part of bangladeshi cuisines are musard oil, stone grineded masala, ginger, garlic, turmeric, paprika etc. After independence imported soyabean from USA replaced the mustard oil and changed the taste of our cuisines. But when it comes to traditional food like HIlsa or mejban you cannot think of them without mustard oil.

Nice video Mark. I always love seeing people from other cultures create delicious dishes. One constructive suggestion: when the cooks/owners try to explain how or why something is done, let them finish their statement/explanation before cutting them off to explain it yourself. Let them do it.
