Probably one of the most popular and loved foods of Bangladesh is kacchi biryani. It s truly a demonstration of the incredible flavor and diversity of ingredients and spices used in Bangladeshi food. Today we have the special opportunity to see Bengali kacchi biryani made from start to finish, all the way from fresh goat to plate. Tajine - Nawabi Cuisine - Thank you to Tajine restaurant in Dhaka for making this happen. Their hospitality shined and thanks to them for arranging this incredible experience, being able to see the entire process. Chef is originally from Old Dhaka and brought 30 years of biryani making experience. He could literally make biryani with his eyes closed not recipes, just his experience and knowledge of the ingredients. There were at least 18 spices, more like 30 ingredients all together, all layered and placed strategically for flavor. Chef making kacchi biryani was one of the most amazing recipes I ve ever seen. While the kacchi biryani was cooking, his brother in law made chicken pulau, another Bangladeshi food that eaten during celebrations and special occasions. Unlike kacchi biryani, the pulao is milder in spice, but more creamy and milky. Again it was an amazing recipe, the spices and ingredients, and the order and method in which it was assembled. Three or four hours after we started, the Bangladeshi kacchi biryani was ready. The rice was unbelievably fragrant and flurry, and melted in your mouth. The spices were perfect, a harmony of flavor out of control. The fresh goat was so tender it collapsed on your fingers. It was literally a perfect biryani and one of the best versions of biryani I ve ever had in my life - kacchi biryani! Nil: I would love to see the authentic Bangladeshi vegetarian dishes, being a Bengali from Kolkata I grew up having tons of Bengali fish cuisines like paturi, chingri machher paturi, chitol machher muithya, maacher jhaal/Kaaliya, etc. I know Bangladesh is famous for their Padma river Hilsa, but being a Bengali with Bangal roots I love the authentic vegetarian dishes Bangladesh has to offer.
During Pujas I love having Bhog with Labra, shukti followed by aaloo jhinge posto.

Thank you Mark. This is an amazing series of Bangladesh. I've never seen Bangladeshi food and people portrayed in such great way before. I love how friendly everyone is. And I'm also impressed with how lovely the country is. In the UK we have many Indian/Pakistani restaurants with Bangladeshi influences (actually quite a lot of Indo restaurants in the UK are run by Bangladeshi people) but rarely do we have actual Bangla restaurants. Bangladeshi food looks amazing - nothing like what I had imagine - even bette. It makes me want to go to Bangladesh just to try this kacchi biriyani dish! Keep up the great work.

Mark, I know you have tried a number of biriyanis in different countries, even in different Indian restaurants in the States and other Asian countries. While looking at those videos, I was thinking, why you were not visiting in Bangladesh to have the real smell, taste and REAL biriyani. I know you would come to visit Dhaka and beleive that you would be astonished to have that REAL Biriyani. By the way, you had one of the best hosts/guides (#petukcouple the Petuk Couple) in the town.

The chicken roast is a common word used for chicken korma. It might be a misnomer because there is no traditional roasting going on. The roast aspect might have something to do with the pot-searing/roasting aspect. Aloo bukhara is dried sour plum or sour prune

Looks like chef got carried away by the camera/attention and added ingredients which were not even required for the first recipe

Mark, love your food journey in Bangladesh. I bet, if you stay in Bangladesh for 3 months you will gain some weight for sure.
