Steve Chu, chef and co-owner of Ekiben in Baltimore, is in the MUNCHIES Test Kitchen making a dish so popular in America, you may be eating it right now: General Tso s Chicken. This Chinese-American takeout classic is made with double-fried chicken breast meat and an iconic sauce that Steve puts his culinary twist on. Paired with steamed broccoli florets, this meal will turn your kitchen into a Chinese restaurant. Scrizzlybear: This dish is at the crossroads of American and Chinese culture. The coke + the oyster and dark and light soy sauces perfectly exemplifies that. Can't wait to make it at home

He didn t explain it, so I will: velveting tenderises meat because both egg whites and cornstarch are slightly alkaline, which changes the structure of the proteins and gives the characteristic bouncy-yet-tender texture of Chinese food.

While watching the video, I thought about replicating the recipe at home but then I thought about how long it takes to make/ ingredients you need. I d rather just wait 15 mins in line and order from Chinese delivery. Nice video though!

This was intriguing! Hahaha Steve red cola does have those pounds and pounds and pounds of sugar! Also am wondering if the orange chicken I've eaten has FANTA pop in the sauce! You letting out some trade secrets here

I hate this version and there s no link to this dish or General Tso.
And what do you mean the chicken is marinating? You didn't even season it! White people season chicken more than that marinade

This guy could be in the Harold and Kumar reboot. Except this time the asian guy is the chill one and the indian guy is the uptight one.

Merry Christmas wow I didn't know General Taos had so much sugar. Is there away to cut the sugar down in your recipe? Sorry Thank you
reply

I think there s about the same amount of sugar in cola as there is in sugar. Also the cussing makes you sound like an amateur.
