The eggplant dish is so similar to a Persian eggplant dish in the way you fry the eggplant. A hint to SIGNIFICANTLY reduce the amount of oil you need to fry the eggplant is to prepare the eggplant just like you did but before frying it, sprinkle some salt on the eggplant and let it sit for 2-3 hours while salted. I don't know the exact science behind this, but i think the salt will allow the eggplant to fry way faster and so you will see you end up using 1/10th of the oil you would use without this technique. I was super excited when i experienced the benefits of this technique for the first time, so i thought to share it with you. Although I later did see your mom recipe does that! I really feel like you are my sister considering how close Afghan culture and food is to Persian

This is such an interesting video. I have never tasted Afghan food, never heard the language spoken and I am ashamed to say that I don t know much about the Afghan culture other than the problems that this country has, which seems to be the only thing the media reports about. The food seems absolutely delicious and seeing your lovely parents on video goes to show what amazing people Afghanis are. I hope and pray that the country goes back to what it once was and that there is no more suffering and yes, if I am lucky enough to meet any refugees from this wonderful country, I will welcome them with an open heart!

This is just amazing and thank you for the resources you have linked to this video. It helps to mobilise action in a meaningful way as sometimes it's so hard for people who want to help but do not know how to. Watching the images of Afghanistan bring back so much memories. I had been privileged to have seen Band-i-Mir and the Buddha statues in Bamiyan when I was working with many Hazaras in the Central Highland region. They face so much hardship and persecution and it will particularly hard on them under the Taliban rule.

With all the news that have been coming from Afghanistan lately, I often think of you and how lucky in some ways that you are, that you have been able to live the live you do, and how I wish for all Afghani women and girls that they would have a similar freedom to do what they want and not what is determined for them by others. Apart from that, the food looks delicious, I love Chinese dumplings so will definitely give yours a try.

Thank you for this opportunity to try Afghan food. We have families moving to our area and an opportunity to provide them with food is wonderful. Do you have any recommendations for a shopping list of staples and spices to provide a family as part of setting up an apartment/home to welcome them? - Oh, and I loved meeting your parents. They are lovely and so sweet!

Intressting! I have never encountered with Afghan food. But many of your dishes also reminds me of dishes from Middle-East.
As I hear your parents speak it's pashto that you speak right? It reminds me of Persian language, as well as you have many Arabic words that you also share. Very interesting indeed!

My mum ( french ) fall in love with Afghanistan after 09/11. She discorvered the country and the people due to bad circumstances but always dreamed that one day she will be able to see the beautiful panjshir valley.
I'm going to make her those dishes, little taste of afghanistan at home.

Thank you so much for doing this. Last few weeks has been emotionally very difficult for me as I was watching the news. Being in a position where you can t do anything at all to help innocent people is not a good place to be in. Good to see that you are doing your part.
