Momofuku Milk Bar Compost Cookies Recipe Get the Dish

We are obsessed with Christina Tosis Momofuku milk bar, everything from her birthday cake truffles, to her crack pie, and her German chocolate jimbo cake, but the treat thats arguably the most well known are her compost cookies made with all of your favorite salty snacks. Just in case you don have a trip planned to NYC anytime soon, learn how to make these addictive cookies at home RECIPE: Momofukus Compost Cookies From Momofuku Milk Bar by Christina Tosi For graham cracker crust: 1 1/2 cups graham cracker crumbs 1/4 cup milk powder 2 tablespoons sugar 3/4 teaspoon kosher salt 4 tablespoons butter, melted 1/4 cup heavy cream For cookies: 16 tablespoons butter, room temperature 1 cup granulated sugar 2/3 cup light brown sugar 2 tablespoons glucose or corn syrup 1 egg 1/2 teaspoon vanilla extract 1 1/3 cups flour 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1 teaspoon salt 3/4 cup mini chocolate chips 1/2 cup mini butterscotch chips 1/2 cup graham cracker crust 1/3 cup old-fashioned rolled oats 2 1/2 teaspoons ground coffee 2 cups potato chips 1 cup mini pretzels To make graham cracker crust: In a bowl mix together graham cracker crumbs, milk powder, sugar, and salt. Set aside. Whisk together melted butter and heavy cream and then add to dry ingredients and keep mixing until incorporated. Extra crust can be stored for 1 week at room temperature or up to 1 month wrapped tightly in the refrigerator or freezer. To make cookies: In a stand up mixer combine butter, sugar, light brown sugar, and glucose on medium-high for 2 to 3 minutes. Scrape down the sides of the bowl as needed and add egg and vanilla extract. Keep mixing for 7 to 8 minutes. Reduce speed to low and add the flour, baking powder, baking soda, and salt. Mix until the dough just comes together, about a minute, and scrape down the sides of the bowl as needed. Still on low speed add the chocolate chips, butterscotch chips, graham cracker crust, oats, and coffee and mix until incorporated. Add the potato chips and pretzels last and be careful to not over mix or break up the pretzels or potato chips too much. Portion out dough onto a parchment-lined baking sheet in 2 ounce balls. Wrap sheet pan tightly in plastic wrap and refrigerate for at least 1 hour or up to 1 week before baking. Preheat oven to 375F. Arrange chilled dough a minimum of 4 inches apart on a parchment or silicon baking mat-lined sheet tray. Bake for 18 minutes, or until the cookies have spread and are faintly browned at the edges. Cool cookies completely on the sheet tray before transferring to a plate or airtight container. At room temperature the cookies will keep for 5 days or up to 1 month in the freezer. FYI: The Compost Cookie recipe in the Milkbar book says not to bake the cookie dough at room temp, but rather fridge for an hour at least before baking otherwise it wont bake properly. I made this mistake, but my cookies didnt turn out bad. They are nice and chewy but with crispy, golden brown edges Im not sure if it makes a difference, but I am using a European style oven and had the setting on fan which distributes the heat equally. Kept temp on 150 C.

Tried making these. They were inedible. This recipe calls for way too much sugar and not enough floor, not to mention all of that beating creates too much warmth and messes up the consistency of the butter. they turn out ridiculously flat. I increased the baking soda to 1 tsp, and then added enough flour until the dough was no longer really sticky (about another 1 1/2 cups) and with that I was able to salvage this dough.

I was just sitting down waiting for my neighbor to come nock on my door an 1 hour later smoke started coming out of the oven but i continued waiting for my neighbor but finally my neighbor came over when the fire alarm started going off i walked in the kitchen opened the oven to see burned crusty cookies i smiled at my neighbor and said there done. OH BY THE WAY I JUST MADE UP THIS WHOLE STORY

i feel like the amount of butterscotch is to much its pretty sweet idk how i feel about the coffee either. Also the dough spreads so fast even after i chilled it i cant get these right i find 18 minutes too long so i tried 10 better but still not yielding great results

Made this and my advice would be to replace the butterscotch chips with peanut butter chips and make sure you have more choco chips than anything else. the butterscotch completely over powered the cookie and me nor my family could taste anything in between

Did you people try this? If not then dont just talk shit. This is probably the best cookie in the US ( I havent tried the recipe but I had the real thing from Milk Bar)

People who are bashing on this, have you tried it? It is so good tbh, even though not a fan of Pretzels, chips, and Oats. But this happens to be so good.

in my opinion this isnt anything special. it isnt tasteful with interesting taste combinations its just throwing everything in there like a 5 year old

I was really hoping the pretzels and chips were just snacks and wouldnt actually go into the mix. But I guess thats why its called a compost cookie

I just made these after watching this video and after 15 min of cooking they were flat and burnt. Fingers crossed for the next bunch in the oven.
