While there is a huge debate on the ight way to roast a chicken, all we know is that this recipe is absolutely genius and easily our favorite way to roast up that bird. The point of this video and Pattersons recipe is to highlight the fact that when youre cooking with the highest quality ingredients you dont need to hide and mask them with a ton of seasoning and/or sauces. This is a great recipe whether youre following it to the letter or using it as a base technique which allows for a little more personalization. Steakhouses where youre dropping 300 on a dinner for two dont smother their steaks in a bunch of different seasonings and instead rely on technique and salt and pepper to allow the beautifully grown and grass fed meat to shine through. If youve never experienced fine dining at its highest and regularly cook with the best quality ingredients then you wouldnt be able to appreciate such a simple recipe and technique.

I normally support everyone who makes an effort to try and show their skills, while teaching others. but HUN, that is was HIGHLY under cooked Furthermore, it had to be severely bland Why not even pepper, at LEAST? IM sorry, but #EEWWhh (Dont make anyone sick girl)

not always having to use less ingredients its better. it isnt hard to add idk some rosemary, pepper, that could take like 3 more minutes and youll end up with a much more delicious chicken. and boneless? why?

You call that a recipe that is not a recipe its called simple something I dont like. Would you please add spices thats why they exist. Btw how. does chicken skin taste flavourful when theres just salt

Normally I enjoy your videos and have tried a few of your recipe. However, this one not likely. If a recipe needs crass cursing in its title to make someone look at it, it cant be good.

When poultry is salted or brined it usually stays a little pink. It doesnt mean that its raw. For a boneless chicken the cooking time is shorter, so this was probably fully cooked.

Ive had it and it honestly is really good This is called dry brining. It has more flavor than you would think but if you want to add spices add them Its not that serious

I love my chicken without spices, if you cook it right you shouldnt need anything else. spices and herbs are great to add but plain moist chicken tastes great by itself.

This is ridiculous. Julia Childs roast chicken is considered one of the best. This chick needs to find some other job. Do people actually pay her to do this?
