I've never had a gordita like that. It may have been where it came up short. A real gordita is made out of a thicker corn tortilla and is then sliced or opened up part way and stuffed with ingredients. That way all the ingredients stay contained. mostly. Kinda like a pita pocket. Similar to popusas, if anyone has heard of those.

Sam remake this please! Using maza make a tortilla size but 1/4 to half inch tick. Grill it both sides until cooked. Then using a knife cut past half way. Make a pocket/pouch to insert ingredients

The chicharrones can be bought fresh at most Mexican markets in the cooked meats section usually, they have bits of meat on them too if they have lonja you must try that. concentrated pork bite

I couldn't help but laugh every time he said gordita I haven't had gordita in a long time but I don't rememeber it being open like that. Now I really wanna make some for dinner this week.

Hey Sam, you should have used Oaxaca cheese for this. Melts better, faster, and is much tastier. It's also very traditional for this style dish. I'd bet 5 that is what you had in Baja

That is not a gordita. that sir is called a mulita. Generally speaking a gordita is made with masa and it's slit open and filled with deliciousness. Just my opinion.

Sorry my man, sadly you haven't been exposed to great Mexican food. Beef Chorizo is excellent, but you have to purchase it in authentic Mexican shops.
