Lamb, rice & seasonings make a crazy good one pan meal. Jules: Looks marvelous! Going to make it this week. I use ground lamb to make meatloaf, and I've noticed that the ground lamb raised in New Zealand or Australia has way less fat than American raised lamb. Here in Cali, Vons market carries Australian lamb and Ralphs carries American lamb.

So my daughter accidentally bought two packs of ground lamb and I've been trying to figure out what to do with it. This recipe kicked ass. I believe this is become one of our staple meals now.
