Hey Sam! Big fan! I blame you for my fluffy appearance. Kidding aside, I am building an outdoor kitchen area and I have the same cutting board you have out on your outdoor prep area. Just curious as to how you season your Ironwood cutting board(s? Wax or just oils? BTW. I would not mind a series on prep/techniques/gadget reviews and that sort of shi. BEEP. stuff. The next Americas test kitchen, but your way.

As a fellow Canadian with dual citizenship, I'm astounded that Americans havent caught on that Canadian bacon is just cured ham and NOTHING like peameal bacon we actually get in Canada. Man I miss peameal bacon, I just cant find it anywhere in California. Anyway I always go with black forest ham when doing Benedict's cuz its essentially the same. Word to the wise. This looks perfect. Epic combination.

I go to Drexel University in Philadelphia and there is an extremely popular Thai & Mexican inspired food truck on campus called Cucina Zapata. They make a captain crunch breaded tilapia burrito with avocado, pico de gallo, diced lettuce and cabbage, spicy mayo and sriracha sauce. I think it would be interesting to see you make a version of this!

Sam, the term Hamburger came from Germany. a lot like Frankfurter. a person who hails from Hamburg is a Hamburger, someone from Frankfurt is. you get it. True story: JFK once infamously claimed in a speech in Berlin, Ich bin ein Berliner! which means: I am a jelly donut. Why Berliner never caught on as a food item, I don't know.

FWIW, you can use an insulated coffee carafe to hold that Hollandaise for up to an hour. Just fill it with boiling water and let it sit for 10-15 minutes, drain and add your sauce. It'll keep perfectly hot until you're ready. LOVE your work, Sam. It's reinvigorated my love of cooking.

I cant begin to tell you how much your make ahead eggs Benedict has changed my life. I cook for a crowd most weekends, and I want fancy-schmansy Benedicts, but it stresses me out. Life changed. Did it, loved it. Thank you, my fellow Canadian. Mwah!

Did we do pizza burger yet? He's gotta do an insane pizza and/or taco burger. Sous vide those eggs in the shell and sous vide that hollandaise in a ziplock prior to blending and the most difficult thing here is grilling the burger.
