Today I make a Greek food feast fit for a king - w/ grilled chicken, lamb, beef, hummus & tzatziki! mickvk: Needed a recipe for future use. That's how we make america cook again. So I'm sharing it. Mediterranean Meat FestChicken KabobsLarge boneless skinless chicken breast, halved long ways, medallioned thinly in a bowl. Two cloves of garlic mincedTbsp each of fresh minced ginger, Cumin, Coriander (cilantro, Paprika, TumericSalt and Pepper1/4 C avocado oilMarinate an hour while you prep othersSkewer 5-6 slices, add a green pepper slice. Add another set of slices and cap with green pepper. Lamb Loin ChopsIn a 13x9 non reactive dish, 1/2 C avocado oilJuice of a lemon3 cloves garlic mincedRed pepper flakes to taste2 Tbsp fresh chopped rosemaryS&PToss chops to coat wellFeta stuffed meatballs50/50 ground beef and lamb (about a lb)Tbsp ea of Cumin and Garlic powderPinch of Red pepperSalt & PepperSplash of Avocado oilSection to 1 oz portionsPress a feta cube in the center and form a meatballMakes about 18

Love the spicy sesame oil in the Hummus, something I should try. Tahini is roasted sesame seeds (ground. Don't bother trying to make this yourself (ask me how I KNOW) you need a TON of them and roasting without burning needs super vigilance. Ohh and don't add water to your Hummus. when you drain the Chickpeas (Fava beans) keep some of the liquid - aquafaba - and use that, why dilute the taste of your Hummus with water. Apparently aquafaba can be beaten into an egg white substitute for vegans, never tried that but I do keep some back to moderate the thickness of my Hummus when I make it.

tzatziki is no tzatziki without a balanced mix of extra virgin olive oil and vinegar. For the amount you made, you should put half spoon of vinegar and maybe 1, 5 spoons of olive oil. It's a completely different thing without them. Finely chop the cucumber instead of grating it. Use a bit more greek yogurt, put it in a towel, hang it and let it strain for 1 hour. Use white pepper freshly grated, and lemon zest is not necessary. Some people don't like the dill. Also when you grill you don't want flames, you destroyed the meat.

Instead of griping about needing a recipe I'm just doing it. Tzatziki Sauce from STCGLong, English cucumber, less seeds (lop then ends, split in half, scrape off the seeds)Grate into a mesh strainer, toss with a small spoonful of salt and drain for an hour. In a bowl, toss in the rinsed cucumber1 C Greek yogurt1 Tbsp minced dillClove of minced garlicPinch of saltZest of half lemonAnd We MixServe with Chicken, beef, lamb, pitasGarnish with a dash of dill

Also, thank you for the good-natured child and crew abuse. I truly believe cooking and talking, like music are life! And, like life, we all need to add some color and spice. My mother in law's Taverna has tzatziki by the bucketful (seriously, 5 liter buckets) and you can literally put it on anything. Our favorite while working there one summer was a coal fire toasted pita, with iceberg lettuce (sorry) and tomato, salt and pepper and tzatziki. I can't wait to go back to Greece one day soon!

First off, Sam I just recreated this on the grill minus the meatballs and I must say this is amazing! So far you're two for two (I made the chicken breast w/ the jalapeno cream sauce, loved that too! Keep doing your thing! Max keep up the good editing skills too bro you're making these videos look great!

Oh come on Tzatziki without olive oil? Do it again! It takes it to a whole new level AND texture. If you don't want to mix it in there, at the very least poor some on top. You can also try GiaourtlOU. It's basically the same thing but without cucumber and extra little bit of pepper and paprika (i like sweet.

I've never seen someone so angry and rude at a spice before and I love it. By the end of the vid, you don't even want to know how to pronounce that awful turmeric crapand you did a great job of insulting itAs a hater of vucky spices and seasonings, I truly appreciated and adored this video.
