Quick tip for everyone! Parmasan isn't vegetarian, because it's made out of animal rennet, instead of the other rennet other cheese is made of. Sadly, there's isn't an official alternative for it.
Instead, at random shops, look for something called vegetarian pasta cheese or something similar. That should work fine (i personally haven't used cheeses like that, I just use whatever cheese I have in the fridge, but it should work.

For my first time trying butternut squash this recipe set the bar incredibly high. :) I made it last night and this was one of the best things I've had in a quite a while. The only adjustment I made was adding a couple pinches of cayenne pepper, because I love me some spicy food.

I'd love to make this - but I could use some suggestions:
I have a rice cooker - can I cook my rice in that and not have to drain it off?
Should I leave my rice al-dente or is it okay to cook it completely

Any other summer squash would work. You could also try eggplant or even mushrooms if you were wanting to stick with vegetarian. I was thinking this would be good with some greens instead of the zucchini (courgette)- swiss chard or kale.

I feel so silly. u guys said courgette and I was lost! I'm like, it looks like a zucchini but thats not what he said! lol I Googled it so I now know another name for zucchini. thanks guys! :-D

1. Summer squash (the family to which zucchini/courgette belongs) likely originated in North America. 2. There were people living in North America long before it was discovered.

People, vegetarians eat eggs, as it is not meat. eggs are not fertilized so they would have never became a chicken, duck, turkey, etc. VEGANS don't eat eggs.
