I Tried To Re-Create These Hand-Pulled Noodles Eating Your Feed i.m. Me: Ive found that if you want to pull noodles relatively fast without the twisting and resting, then you use cake and ap flour and baking soda. But traditionally you would just use high gluten flour (like bread flour) water and salt. Then do all that twisting and pulling and etc. Im guessing.

In that kind of noodle place, at least traditionally, you watch someone making dough for over a year, then you can make dough, a couple years later, you are allowed to pull noddles. Oil is critical too. When I was working in Shanghai, I had this kind of noodle 5 nights a week.

Im not sure if people realize how useful a video full of MISTAKES is. Knowing what works without knowing what doesnt is incomplete and far from mastery. All these mistakes are precious information and equip us better in advance with gastronomical wisdom.

Dont get me wrong, these videos are so entertaining but so wasteful when it comes to ingredients. Like I know these particular noodles were very hard to make so it took many attempts to get it right, but still so wasteful

Hey would I love to see Andrew do the olio challenge. Olio is an app that shows nearby people giving away food they dont want or cant use. It would be a great way of showing people how to be more food conscious.
