Hearty And Delicious Sweet Potato Recipes Steve: These recipes are fairly good, but they are not sweet potatoes, they are yams. I'm 56 yr, old Irishman from rural Kentucky & sweet potatoes look like a russett potato with white flesh inside, we grow some here, but the majority of them are grown in N. Carolina. Yams are oblong with orange flesh inside. Many folks do not know that. The good news is that yams are the # 1 vegetable for vitamins, minerals, etc. & yes, the stereotype is true, we Irish love are taters, i would say i eat some form of taters appx. 300 days a year, pasta or rice or none the other 65 days, please do not question us Irish on taters, lol, it is like questioning a pastagranny on the procedure/process & correct her on the way to make homemade pasta, lol.
