Why not use vegan cheese? Did you guys know that in the dairy industry female cows are artificially inseminated and have their babies stolen so that we can consume their milk? This is why so many people are switching to plant based milk alternatives. Humans Shouldn't be consuming cows milk. Yes cows need to be milked, by their children, not human hands.

My dad makes the best damn grilled cheese. The tip is to microwave a slice of cheese on bread first before you flip it onto the other bread in the pan. The warmth helps speed up the caramelizing. I'm pretty sure. Either way, it's gorgeous.
