1) You want to make the syrup ahead of time, so it has time to cool down. You don't want your syrup mixture to be hot.
2) You want to put the cold syrup to the pie the moment it gets out of the oven, the warmer the pie the better it absorbs the syrup.
3) If you really like oranges and want a more nuanced flavor, you can take the juice out of two oranges that you've boiled for like 1 hour so that they lose their bitterness, and then you can food-process them into a pulp, which you can add to your wet mixture. The end result is sturdier and even more pudding-like: )

Very nice recipe. I am excited to see filo dough using as base. Other side of the Aegean Sea we use semolina rather than filo pastry while creating a different version of this desert. (it's called revani) Orange syrup is the key of this recipe for sure. I can already smell the orange flavour just by watching it: )

I'm from Greece and I've been making portokalopita for years! It's one of my favourite desserts! You can it with a scoop of kaimaki ice cream, or chocolate ice cream!
And you could also melt some chocolate and pour it over the portokalopita!

Unwaxed orange means it's not preserved so it won't last as long as a waxed fruit.
Wax on fruit like apples as an attempt to preserve freshness and has nothing to do with pesticides. I am so tired of this ignorant push for organic produce.
