This is a spin on an old time recipe. My mother used to make this every week on the stove using a cast iron skillet, canned pineapple rings, cherries. She used to take the pineapple juice, add sugar and cook till she had a syrup. She would finish the cake top by putting it under the oven broiler for a few minutes. It was always delicious!

Looks good, but you can't get golden syrup in the United States (I would venture that most Americans don't even know what it is, so I'd suggest if anyone not in the UK wants to make this, use the traditional topping of brown sugar and butter.
