An important thing of note about parsnips for those that have never grown them. Parsnips should be harvested with gloves, and if the tops are cut off, you should not do this with your bare hands.
Garden parsnips are in the same family as the giant cow parsnip, a vegetable that while equally edible, is more often known for its sun-reacting sap, which can burn or scar you if you get it on your skin. So too, surprisingly, can garden parsnips do the same. There’s a reason why you buy them at the store without any tops on them, it’s to prevent people from accidentally getting a rash (also the roots keep better without the tops in storage, of course. I know you can indeed eat the tops, the rash-causing compound breaks down with cooking, as it does with the cow parsnip, but the big ticket item is the roots. It’s a worthwhile and once-common crop, as it will grow in conditions where other plants fail to thrive due to prolonged cool periods. Just don’t burn yourself.

Would love to hear more about growing blueberries in central Texas, I always assumed there isn't enough time to get a harvest or would come out to $1 per berry. Very interested, If he does not have a video already ( I will check after commenting because lazy)

Went from Zone 5b to 5a so that's some good news. I thought i had it bad but zone 3/4 is crazy cold. Going to plant some garlic in one of my garden beds. Hoping to get a cherry tree next year and a blackberry bush. But dam those Japanese beetles.

Beware of parsnip leaves. They can cause phytophotodermatitis, a painful rash of blisters if you touch the leaves with your skin and then it gets exposed to sunlight. Don’t ask how I know.
