Smoking Salmon in Smoke House (Catch, Clean, and Cook!

Jeremy, Scott and I, head to the Garanaska river to tackle up for some fresh running salmon in the fall running up from the Great Lakes. We then returned to the off grid cabin to smoke the fish using a freshly fallen cherry wood branch. We combine the smoked salmon with corn flour tortillas, salsa, tomatoes, and red onion to make a super tasty fish wrap. Some split shot sinkers or weights are attached to keep the line down where the fish swim. We are targeting silver king or Chinook salmon that are entering the stream to spawn in the annual fall salmon run. We manage to catch a nice big hen full of eggs. The eggs are carefully harvested and saved for our next fishing adventure. These will be tied up in row bags. I clean the salmon on the rocks into two beautiful fillets, enough for Jeremy to take home with him to share with his family. The other large fillet is smoked in the smoke house build by Kevin from Modern Self Reliance. We use a recent downed cherry wood branch to smoke the salmon in an enclosed pit below the smokehouse. The smoke then rises from the pit into the smokehouse chamber where the fillet is places on a wire rack for drying and absorbing all the wonderful smoky flavor

With masa harina you can make more stuff than just tacos. Can always make pinole which is the Mexican answer to pemmican. Mix up some chia fresca and you have some good survival food. Abuelita might have something about that tortilla you made. lol Just so you know, two -ll-s together make a -y- sound in Spanish. Sounds more like tor-te-a. At least here in Texas we say fillet the same way you do.

This American only says fill-et if I am filling a gap in a wood joint. We fill-ay a fish just like you do bro!
Oh, and way too much seasoning. (I see high blood pressure in your future) Try to brine the fillet for about an hour, rinse it, then lightly season the fish just before you smoke it. The fish won-t be as pungent, and you will taste the smoke flavor better without all that seasoning.

I love those cork-wrapped vintage rods- my dad had a huge collection I didn-t get, but I did snag all the vintage lures.
That heat does sound like Florida. imagine that crappy feeling for 6 months straight, day and night 70-100% humidity. - walk outside and you-re sweaty by the time you get to your car.

Love following along with your videos. You have inspired us to do our own 365 day challenge of only eating what we grow, catch, raise even though we have no experience. Any advice?

Pecan and hickory is good for smokin. Next time you cook a filet try cooking it on a plank of cedar with lemon slices on the top -

I also use cherry wood for smoking, apricot is also nice. but man If u smoke meat with wallnut it will stink like poop
