I'm Carving and Eating a Giant Swordfish caught in New Zealand with Matt Watson. We caught this 400-pound fish and brought it to the filet table to clean and process. So much class coming from these men. Josh is a is a person who can be on the poster of his strength and determination in coming back from his cancer and Matt or his commitment to preserving the resources the ocean gives us. Only takin a fish when necessary and sharing with the community. His statement that This isn't my fish. The ocean gave it to us, so it belongs to the community says it all. I was lucky enough to find some Pumpkin Swordfish steaks at my local Kroger. I bought every one. of them, they only had 4 left but what an amazing fish to eat.

Utilizing all of the fish is a noble thing as is sharing all the meat you can but I wonder about the cartilage and/or other
parts for cooking I'm sure they can be cooked nice but my question has to do with the heavy metals/poisons that
some of these fish carry. Tuna along w/ other fish share the high arsenic & stuff like that but is it western fish that
have this or all fish in the ocean Anyone know about this I'd love to get a chunk of this fish. I'd risk the toxins
b/c moderation is key & I rarely get any good fish. peace guys

Fish burgers (and sliders) simply the best.
I don't have a number 1 fish, but right now, freshly caught trout cooked whole over a fire with salt and pepper, lemon or lime juice, some complementary herbs and a tad bit of salted butter. Right now the trout have very orange flesh and are very chunky. Lovely fish to eat. Creamy, juicy and the natural flavour of the fish is complemented by the other flavours. By smoking them whole I'm able to get as much meat as possible off them.

Ya, it's so sad about the parasites, I first noticed them in a trout about 35 years ago, it progressed in trout over the years, then I remember it was bad in red grouper and amber jack and then I started seeing them in the gag grouper, seem to be in the tail meat first. I wish I knew what caused it, I once herd that the fish gets them from eating a infected shrimp but not sure if it's true

You can not go wrong with a pan seared blackened swordfish. I am a chef, and i can tell you blackened swordfish served with a vegetable skewar with green and yellow squash with potatoes and broccoli brushed with butter, salt, pepper, and garlic. Make a lime and cilantro cream sauce to plate it all on and enjoy.

I own an Italian restaurant (Tulsa, OK) and I serve an 8 oz. Hand cut/trimmed filet of swordfish with a piccata sauce over angel hair pastaI’ve been in business 35 years and win awards for my swordfish dish every year.

Nice, Panthers fan here too. Brother lived in the Keys and my parents grabbed me a Panther's hat the first year they came out. Loved the logo and I work for a major hockey company so got the Panther logo as a tattoo.

Id love to eat some swordfish. I once caught 8k pounds of Halibut out of Seward. Beer batteted in app1inch squares and deep fried in a cast iron dutch oven over a fire

I've cleaned hundreds of swords almost all of the as well as this sword has a worm named ascarids are parasites. Great looking sword by the way congratulations.

I wanna see Matt do some combat fishing with the young goliaths then vs the big goliath groupers. Also so far my favorite fish to eat is Black Drum.

Ocklawaha Florida. Olive oil flash seared and grilled Swordfish steaks over Hickory wood coals. Have Jeep, will pickup free sword within 150 miles.

Just so everyone knows, this doesn't hurt the fish it will regrow the meat after you release it back into its natural habitat and live a full life!

Swordfish is one of my favorite fish to eat so tender and flavorful. lemon butter on the skillet cant go wrong and finish it in the oven

I can now confidently say I know how to carve and cook a swordfish to an edible standard. All I need now is a swordfish.

Trigger Fish. Stop pointing out the parasites, it's like a wee baby! We all have parasites, just some more than others!
