Hey guys! I just wanted to clarify a bit on the saltwater washdown thing again as I always seem to get a lot of questions. You should rinse/clean your fish fillets with SALTwater, not freshwater. Yes, you can make your own saltwater by adding salt to FW. No, this is really not open to debate, lol, it's science! :)
I'm not Dr. Osmosis but the gist of it is that the smaller FW molecules get into / permeate the fish and cause the meat to lose flavor and go bad faster. Saltwater does not do this. Maybe someone can explain it better, but SW is definitely better. Any knowledgeable person, or chef, will tell you this. Thanks and Keep on Catchin'!
PS: Here is another brief explanation that I found: fresh water flows into the cells that make up much of the meat. They don't actually explode because the lipid membranes stays intact. But they expand and become permeable to large molecules, so soluble proteins and small molecules that contribute to the flavor leak out. The flesh also becomes soft because of the extra water.
In practice, a quick rinse in fresh water doesn't hurt at all. There isn't enough time for a significant amount of water to be absorbed as long as the meat is patted dry. But it's best to just wipe off the fillets or give them a rinse in saltwater (either real or homemade) before freezing. Then rinse them after they thaw out just before cooking.
If you freeze fish in fresh water, large ice crystals form that punch holes in the cells membranes. This lets a lot of flavor leak out and really changes the texture of the meat. Freeze them after a rinse in saltwater or after patting them dry.
I've tried all the different ways over the years and it really makes a difference. Try it yourselves.

hey to all the people on here as well as to darci I need some help am getting into fishing I really need to know the don't lol I have watched some videos watched some people snapped some really good fishing rods I want to know ways to prevent that from happening as well as what is tackle in the fishing sense of things. pleas guys don't be to Savage towards remember just getting into this.

Great vids! Been subbed for a while. Was wondering if you could share what video editor you all use? We make fishing vids and have just purchased the adobe package with PrPro. I like watching fish and game being broken down. You did a great Job. I think the thing you called a sharping steel is a honing steel, or it can be a little of both depending on how aggressive it's flies are. It's used to straighten the edge before each use. Thumbs up

Good Job! Finally I see someone fillet and skin a fish properly, that's the way I was taught by my dad back in the late 50's. You don't stick the knife in the gut, it does make a difference.
