We have fished Okeechobee many years and as you said the shellcracker seemed to have disappeared. until last year. We got on them HARD in July and again in August. 11- was normal with a few pushing 12-.
Water levels were beginning to turn but we found beds twice as big as a pickup that were loaded with shellcracker.

Buy her a Tumble Drum for Christmas or Birthday that will make her having to scale fish easy. 25 bluegills scaled in 10 minutes, don't put the water very high the bluegills will float. You want to hear the motor working, if scales on the belly give it another minute & half no eyes left it chews up the heads. Love it

A lot of people ignore panfish, thinking there isn't any sport, or quality of eating with them! LOLOL! All panfish are on an equal par to fried saltwater fish! Yes sir! All you need do is scale them off, gut them, and flour them up. and man o man!

In the Philippines we cooked fish with head. The head is the most yummy parts. We don't coat with flour, we just deep fried it, then partner with soy sauce and chillies as dipping. Then eat with steam rice. yummyyyyyyy.

That was a fun video to watch! However, not sure how you can stand in the water knowing a bunch of gators are around you? I'd like to see you & Kelly show me how to go and catch some big Muskies!
