Would suggest not searing in butter, as butter burns too easily. Best practice is to sear in an oil that can take higher heat like grapeseed. The fond (meaty bits on bottom) will be more brown and less black. Once the breasts are cooked most of the way through, turn off the heat, add the butter. It will brown and you can baste the breasts with it and then add your booze, shallots, garlic etc. It makes for a bettter end product IMO.

got myself a wild goose here in the Netherlands, and it tasted fishy. is it the same with wild Canadian goose?
if yes, is that recipe able to mask/hide that taste?
if no, how do you mask/hide that fishy flavour?

Another quick and easy recipe is Italian dressing marinated 1 cubes kebabed and wrapped in bacon on the grill. And to avoid bbs get a hardcore magnet and use steel shot. Going to try your recipes next time I get some skycarp!
