Ever wondered why Lobsters and crabs turn red? I did, its because they have a pigment called astaxanthin in their shells, which has the ability to absorb blue light, making the shell appear red under certain conditions. When the lobster is alive, the pigment is safely stored inside a membrane hidden in the shell called the crustacyanin. It-s packed so tightly inside the lobster shell that the pigment is trapped inside the membrane, unable to flow freely. That means that crustacean usually appears in those muted dark blue or green tones. The pigment responds strongly to heat, though: Once you dump a crab or a lobster in a pot of boiling water, it-s body chemistry changes: The pigment-astaxanthin-gets separated from the membrane-the crustacyanin-transforming your dinner into that ruby-hued tone we love to see

quality! Just showed this video to the mrs and we have decided to take our nipper out rock pooling. As a chef think its really important to show kids where there food comes from. My daughter is just like james when trying new food but its really nice to see people teaching there kids about food. If you ever need or would like any recipes I'm a Michelin trained chef would be a pleasure to pass them on to you thank you for the inspiration.

The amount of happiness I felt after you put the crabs back is unmatched. I usually LOVE eating crab but it kinda tugged on my heart strings when you explained how the male would protect her while she was vulnerable- and it made me kinda sad that there was a chance you'd take one them home because either way one would be consumed by something if the other was gone. The action made me outwardly -awwwwwwwwh--

The way you go outdoors with your family and spend time with them and do stuff like this with your son is absolutely amazing. I wish I had a dad like you growing up. I hope he appreciates times like this and will always remember how amazing you are. Keep up the great work and keep being an absolutely amazing dad and husband.

Fun facts for the crabs. The -V- is their tail, all curled up. You're spot on that the wider tail of the female is for holding on to the eggs. But to the best of my understanding is that the narrow tail of the male is for holding on to the female, if you know what I mean; )

The New England Aquarium predicts about one in every 2 million lobsters is blue. The blue color is caused by a genetic defect that produces an excess amount of one protein that gives the lobsters a blue shell, according to the University of Maine Lobster Institute.

Loved it when you put back the two paired crabs, a less knowledgeable man would-ve taken them both. And knowledge is also the key to protecting the crabs and the areas they live in. Plus leaving some to mate will keep the numbers up.

Watched this 18-09. Brilliant video again, but I just can't understand why anyone could give a thumbs down, they must be so sad with their own lives, I apologise but I had to make a comment about it.
