The Basic ingredients (including the fish): ginger, onions, tomatoes, spring onion, lemon grass. and/Or you can add any of these leaf vegetables: water spinach (Kangkong), cabbage (picchay, bok choy. so basically the process is just boiling with all u ingredients. i knw u guys love to cook/eat the fillet. but with Tinola, having the bones still attach with the fish meat will have the best flavor (btw we also keep the skin, fatty flavor )

In Hawaii they are called Papi'o or trevallies anything over ten pounds is call an Ulu'a. We just fry em up with salt and a little bit of pepper and we good to go. But we fry the whole fish if it's super big on the hibachi it goes.
