Why not just sand-dune cook the gutted body, leaving on the skin, and it will fall off when properly cooked. Put the BBQ sauce and bacon bits into the chest cavity, and close up. Excellent chicken of the trees.

Iguana hunting should be put in all the Florida travel brochures! I haven't been to Florida in years because Disney has screwed up the whole state but Iguana hunting looks like a lot of fun!
