In Windows 8.1 If I move folders using the first method (properties > location > move), the folder ie -Videos- still appears in the C:\users\(my profile) location but also in the new location on the D: drive. The original on the C drive just has the location changed from -C:\Users\(my profile)- to -D:\Videos-.

Would you recommend moving the whole user profile to another drive or just moving the individual folders such as documents, photos, etc... Are there any benefits by moving the whole profile over just specific folders? Thanks

The 4th way is to just change the folders path letter. It will ask you if you would like to move everything, just select ok -
