Soverin is a f'ing joke. I paid them and could not get into my account. Sent them emails from my other private email providers and they didn't respond. I finally went to my bank and refuted the transaction and had a refund in five days.
As far as good. I skip over all, or most of the ones you have mentioned. Out of the list you provided, only tutanota is worth considering. After all was said and done, I went with runbox as they meet all of my privacy needs. And they are affordable. I have their mini package which gives me about 10 gb of storage, and pay about $35/year. I think they are running a special now too if you sign up for their mini, mid, etc. they will give you two years for the price of one. I missed that promo.
There is also counter mail, ctemplar(pricey, and posteo. de. The latter is another great German product. Runbox is based in Norway and they have some of the strictest, confidentiality laws. So if I had to choose a private email host, I would want one from Norway, Sweden, Iceland, or Germany. Fjordmail is another great private email company. They do not employ the say tech as runbox but I do like them. And as they are in one of the Nordic countries, you can be assured that your email is going to have more privacy than google.
I also want to add that fjordmail gives you a few months to test our your private email. When you switch over, the first three months of your fee are donated to a water charity. So they are a decent company who cares about the environment.
Of course if you are someone with a lot of dough, and you demand the strictest technology to protect your data, then ctemplar is the one for you. But they do charge quite a bit more.

The river doesn't always flow fast enough during droughts to turn impellors at the dam. Just ask anyone in Texas during the most recent blizzard. Ask those in Australia during the last great drought. Self managed vps, strict/hardened firewall/no ports open. All inbound mail filtered through mx guard dog. I have not had one piece of spam in years. Mail can be encrypted and password protected.

It's such a pain in the ass to switch from Google to proton. I'm debating if I should do it or not. yeah I like my privacy but not to THAT extent. I'll sit on it and see

Totally agree. Self hosting is the best option out there. Most of web hosting services offer a plug and play solution. It s not how hard that you can imagine.

Setting up a mail server is one thing (and very hard by itself. But you'll be blocked by most e-mail providers as your mails will be considered spam.
