If you haven't got a Wok, frying that amount of veggies in a frying pan can be a pain, try blancing the veggies in boiling water for a couple of minutes first (not the bean sprouts) this will cook the veggies through, max 5 mins in boiling water. then add to the frying pan for a further few minutes along with the bean sprouts. Bean sprouts need hardly any time. Adding water to the pan like you said is very good as it helps steam the bean sprouts through. This will leave the veggies cooked but still have a tiny bit of crunch in them.
