I agree on everything you said about the food here, except maybe about duck: the part of France where duck is traditionally best prepared (and bred) is the South-West, not in the Loire Valley (which is considered as Mid-West. BUT as some duck recipes are quite renowned, it is true that you can actually find them on the menus of restaurants all over the country. And it's also true that duck confit is to die for (but only in a good restaurant, not in the cheap ones.
Apart from that, thank you for all your tips. I enjoy watching your videos. And this is really the first time I find something (slightly) inacurate.

I Looooooooooove goat cheese on toasts.
This cheese might be Sainte Maure de Touraine, very well known in Indre et Loire ( 37 )
Try it warm with a bit of honey on it, it's absolutely incredible.

Hey! I was exactly where you filmed this two months ago! I loved Amboise! It is the perfect place from where to visit the Loire Valley and the Castle was my favorite among all those I visited, which is saying A LOT! Keep up the good work, Mark!

Andouillette is definitely an acquired taste. It not only looks like tripes, it tastes like it also. Unless you are a 70 year-old French man, you should stay away.
