The French are the world-s biggest snail-eaters!
It's hard to land on an exact number but France consumes about 25, 000 tonnes of snails a year - equivalent to 700 million individual snails! To meet the world-s demand, snails are mostly raised in farms. It can be dangerous to eat straight from the ground since there can be parasites found in them that could be fatal to humans if consumed. To avoid those parasites, there is a cleaning process that involves putting the snails on a water fast for 3 days to be purged before being fed carrots or flour for an additional week. Once they have gone through that process, they-re ready to be cooked!
Ingredients:
1. Snails
2. Butter
3. Produce: Parsley, Garlic, Shallots
4. Snail Shells
5. Salt
Optional:
White Wine, Baguette, Comte Cheese
