Without a rail pass like a Eurail Pass, it can often be cheaper to book well in advance. Only downside, these tickets are generally linked to a specific train, so no option to get off at a particularly nice looking station on a whim, or staying a little longer in any place to linger, have something to eat or just stroll, you have to plan everything in advance and stick to it, as mostly, they are not reimbursed when unused. In most cases, you can book on-line and print at home or download them in an app, in some cases, you will have to print them at a ticket machine with your ticket code, be careful when that's the case to leave from a station that has the right ticket machine, e. g. the Hungarian railways can sell tickets to Hungary, but you have to be IN Hungary to print them out.

Germany Railway is really good, their second class is very comfortable and relaxing, book early to get the cheapest price. I went from Nuremberg to Munich for 19 euros, 75% of the train was empty. It could have been cheaper, if they discounted the tickets more to fill the seats, and use the budget airline model, where they use a discounted pricing strategy to attract customers. Then raise the price accordingly. This way consumer and rail company will benefit by increase in passengers and revenues. win win.
